Preparation method
Briefly blanch the peas to maintain a firm bite.
Blend them finely in a Magimix or food processor.
Mix the pea purée with the pesto and add a little lemon juice to taste.
Spread the mixture and finish with ricotta, a pinch of salt, and pepper.
Delicious on a flute, sourdough bread, or as a dip for an aperitif!
