Ingredients
- 8 mackerel fillets
- 150 g white rice
- 50 g deep-fried onions
- 10 g sambal badjak (spicy Indonesian condiment)
For the sweet-and-sour cucumber:
- 2 cucumbers
- 2 stalks spring onion
- 3 dl table vinegar
- 0.5 dl water
- 100 g sugar
- 20 g Bresc Madras
- salt and pepper to taste
For the Indonesian soy sauce lacquer:
- 200 g Bresc Shallot chopped
- 10 g Bresc Garlic puree
- oil for gentle frying
- 10 g Bresc WOKchilli
- 15 g Bresc Ginger puree
- 2.5 dl Indonesian sauce, medja flavour
- 0.5 dl ginger syrup
